Pizza
7 dl grated mozzarella cheese
4 tablespoons cream cheese (crème fraiche also works)
5 dl almond flour
2 eggs
3/4 dl nutritional yeast (can be excluded)
salt

Heat the oven to 200 degrees. Put all the cheese in a thick-bottomed saucepan and heat on the stove, medium heat. Mix almond flour, nutritional yeast and spices in a bowl and when the cheese is completely melted, pour it into the bowl and mix with a wooden spoon. I recommend using your hands as it will be easier to mix. Now it´s time for the eggs. It becomes a sticky but cohesive dough. Press everything out on a baking sheet with paper on so that the entire paper is covered. Put the plate in the oven and bake for 5 min. Add your topping and bake for about a quarter of an hour until the pizza has a nice color. The children's favorite is with marinara sauce, ham, chorizo, cheese and mushrooms. It is important that you do not have a topping that gets wet, but keep it as dry and fairly thin as possible. The whole thing is a pretty messy story in the beginning, but once you get a swing at it, this is a very practical and extremely popular dish to bring at a picnic or to eat after training. You can also prepare the pizza by rolling up the dough on the baking paper with another piece of paper and putting it in the fridge. Then take out the roll when it's time, roll out on a baking sheet, bake for 5 minutes, add the topping and then finish by baking for about a quarter of an hour. Divide into squares and serve with a good green salad.
