Salmon stew with gremolata

A meal to offer to a good friend.

Salmon stew with gremolata.

It takes about half an hour to prepare and the recipe is calculated for 4 persons.

Start with gremolatan so it is ready when the stew is done.

  • 2 lemons

  • 1 dl chopped parsley

  • 2 cloves garlic

  • 1 dl grated parmesan

Grate the yellow on the lemons, chop the garlic and parsley and then mix everything with the grated parmesan. put it to the side and begin working on the salmon stew.

  • 600 g salmon

  • Half a kilo of shrimp with shells

  • 2 tablespoons fish or shellfish stock

  • 3 teaspoons tomato puree

  • 1 squeezed lemon

  • 2 dl fresh cream

  • 1 dl cream

  • 1 teaspoon salt

  • 2 pinches of Cayenne pepper

Cut the fish into cubes and peel the prawns. Boil together the other ingredients in a pan and let it simmer for a few minutes. Then add the salmon and let it simmer for another 5 minutes.

So the pot is ready! Serve topped with prawns and gremolata and a clean green salad or even better, arugula with olive oil and flake salt. Bon apetit!
